In honor of the first NFL football Sunday of the year I thought I would share with you some healthier alternatives to traditional football food...
The first recipe is my layered bean dip. This dish has protein from the beans, sour cream, and cheese, as well as lots of veggies and healthy fats from the avocado, tomatoes, and olives. I use low fat sour cream and reduced fat shredded cheese to make it even a little bit more healthy. This is great served with your favorite corn tortilla chips or carrots, broccoli, and celery.
The ingredients: a can of refried beans (I use black beans), low fat sour cream, Hidden Ranch spicy ranch mix, avocados, garlic, lime juice, scallions, sliced black olives, tomatoes, and shredded cheese.
Make sure you use a glass dish for this appetizer, so you can see all the yummy layers! First layer is the refried beans, spread it around nice and even with a spatula.
Then mix the ranch mix with the sour cream to give it a little bit of a kick, this is a nice twist to just using plain sour cream.
Using the spatula, layer this on top of the beans.
Place the avocado in a bowl.
Add some minced garlic...
and some lime juice, salt, and pepper.
mix until creamy.
then layer the guacamole on top of the sour cream.
Then sprinkle on some olives...
Some chopped tomatoes and scallions (I also added some parsley and cilantro).
Then top it off with cheese...YUM!
My next recipe is my vanilla cream dip. It's super easy to make...
and tastes great with fruit salad!
The ingredients: Light sour cream, brown sugar, and pure vanilla extract. Just mix two tablespoons brown sugar and one teaspoon vanilla with the sour cream and serve with fruit. So easy and really tasty!
The last recipe is my cilantro-chive-parsley and sour cream dip...
tastes great with grilled veggies!
The ingredients: light sour cream, garlic, lime juice, minced chives, parsley, and cilantro.
Mix two cups of sour cream with a handful each of chives, parsley, and cilantro minced finely. Add 1 tablespoon of garlic and two tablespoons of lime juice. Mix and your ready to enjoy!
