Steak and Veggies A La Eddie!


Now that I have a full time job and don't get home until 6:30 or 7pm every night, Eddie has been making me dinner more often. This night he made me a grilled London broil with a broccoli and red bell pepper stir fry over brown rice. It was awesome!


One of Eddie's favorite things to cook is Steak! This one is a London broil steak. It is one of my favorite cuts of steak because it is very lean and awesome on the grill! Eddie pretty much uses only one thing to marinate his steak in : Soy Vay Veri Veri Teriyaki. It is one of the best teriyaki marinades I have ever tasted and you can find it at your local grocery store.


Eddie also marinated some onions in the sauce and used the onions and excess sauce to make a wonderful stir fry. He just added some broccoli and red bell pepper, a little corn starch to thicken the sauce and put it all on top of some brown rice. Yummy! and totally easy! Here is the recipe:

Grilled Teriyaki Steak with a Broccoli and Red Bell Pepper Stir Fry Over Brown Rice

    1 London Broil Steak
    1/2 Bottle Soy Vay Veri Veri Teriyaki Marinade
    1/2 onion cut into thick strips
    2 cups brown rice
    4 cups water
    1 tbs olive oil
    1 tbs brown sugar
    1 tsp sesame seed oil
    pinch of salt
    1 head broccoli
    1 large red bell pepper
    1 tbs cornstarch

Place the teriyaki sauce in a large plastic bag. Place the steak and onion in the bag and marinate for two hours to overnight.

Cook two cups of brown rice with 4 cups of water and 1 tbs olive oil in a rice cooker. Keep warm until the rest of the meal is done.

Pre-heat the grill and remove the steak from the bag and place on a plate. Pour the onion and excess sauce into a pre heated sauce pan and add the brown sugar, sesame oil, and salt. Chop the broccoli and bell pepper and add to sauce pan. Heat until the vegetables are tender. Add the cornstarch to a small amount of water and mix, then add to the sauce pan. Continue to heat until the sauce has thickened. When the Grill is ready, grill the steak to the desired doneness.

Serve the steak with the vegetables on top of the brown rice. Enjoy!
