Ok so I know it doesn't look that good, but trust me, this recipe is yummy! I love cooking italian style because it's so easy and you can experiment and the result is almost always delicious!
The ingredients: polenta, butter, onion, turkey sausage, portobella mushrooms, and tomato sauce. See how simple it is, there isn't even that many ingredients!
Polenta can be cooked on the stovetop or in the oven. I usually cook it on the stovetop but I decided to cook it in the oven this time because it doesn't require constant stirring and attention. So I could focus on cooking the sausage and portabella mushrooms.
I used an iron skillet to cook the polenta. I added about 1 tablespoon of butter...
Some salt...
one cup of polenta...
and 3 1/4 cups of water.
Stick it in the oven for 50 minutes and it comes out looking like the picture above. It should be thick and creamy. Let it cool so it solidifies a little bit.
For the sauce, peel an onion, chop off the ends, cut it in half and peel off the skin.
Chop it up, I decided not too chop it up too finely but it is up to you how finely you want to chop your onion, it doesn't matter.
Slice up the sausage...
and the portabella mushroom.
Saute the onions until nice and browned.
Then add the sausage...
and the portabella mushroom. Cook until the mushroom softens a bit and the sausage gets nice and browned.
Then add the sauce, cover and cook for about ten minutes. Then serve alongside some creamy polenta and enjoy!
P.S. This would also be very good topped with some parmesan cheese but we didn't have any.
