Sore Throat Food- Soup and Ice Cream!

As you can clearly see, there is no TWD for me today. After contemplating it long and hard I have regretfully decided to suspend my membership and participation in TWD for awhile. I have had so much fun baking with the other TWD members and everyone has been so great in making me feel like part of a community. I have absolutely loved it. But unfortunately I do not have the time. Truthfully, my passion really is not baking, it is cooking. So I have decided to spend the little time I have cooking healthful, yummy, flavorful meals instead of baking delectable treats. Thank you Laurie of Quirky Cupcake for hosting such a wonderful blog event each week. I look forward to continuing to read each members entries every week!

Eddie, my husband, woke up Saturday morning with a sore throat and a throbbing in his ear. On Sunday, it was worse. We went to the doctors and both got strep tests done and he was sent home with some strong ibuprofen and penicillin. On Monday, he woke up and his throat was practically swollen shut! Poor guy. Both of our tests came back negetave for strep throat (thank God!) but he was in so much pain still so he went back to the doctor and they gave him even more antibiotics and vicodin! He's been feeling better ever since !

My husband is one of the most wonderful, kindest men I have ever met. But he does not deal well with being sick, especially this sick. And I do not deal well when he is sick either. It makes me feel helpless. There is nothing I can do to ease his pain. So, I do the only thing I know how, I cook! Because his throat was so swollen and he was in so much pain Eddie couldn’t really eat. So I made soup! Two different kinds: Corn and Potato Chowder from the Cooking Light Magazine and my very own Chicken Noodle soup. The recipe for the Corn and Potato Chowder can be found here.

For my chicken soup I boil two small chicken breasts in water until fully cooked through (about twenty to thirty minutes). I remove the chicken and allow to cool to room temperature. I season the broth with a little bit of chicken bullion and some herbs (for this soup I used fresh thyme) and add vegetables and noodles (i used carrots, onions, and bowtie pasta but you can use whatever you like!) Once the chicken has cooled I tear it into little peices and add it back to the soup. I let the soup boil for 10-15 minutes until the vegetables are soft and the pasta is fully cooked. As you can see I like my chicken noodle soup chunky with not alot of broth but you can make it as filling or soupy as you like!

And of course the ultimate comfort food for a sore throat is always ice cream! YUM!
