Not enough time for breakfast in the morning? Bake up a batch of these suckers and take a couple on the go! I used a crustless quiche recipe and altered it to make mini quiches.
The ingredients: eggs, milk, flour, shredded cheese, parmesan cheese, salt, Pam, and there is butter in this picture but I am pretty sure I didn't use any butter! I also used olive oil and ham, which I apparently forgot to add in the picture.
First you want to preheat the oven to 350 degrees Fahrenheit.
Grease a muffin pan with Pam.
Then cover the bottom of the pan with shredded and parmesan cheese.
Heat a medium skillet and add some olive oil.
Chop up the ham and add to the pan to heat until lightly browned.
Add six eggs to a bowl.
Add one cup of milk.
Stir together with a fork or spatula.
until well blended.
Add half a cup of flour.
Mix well, get all the lumps out!
Add the ham.
Use a ladle to pour the batter into the muffin cups.
Bake for about 20 to 25 minutes, until firm but not hard.
Allow to cool to room temp and your done! Store in a plastic bag or stick in the freezer. In the morning grab a couple and reheat in the microwave 30 seconds to a minute and enjoy!

I have been eating these for breakfast almost every day as I can't get my lazy ass out of bed early enough to eat ceral. They are delicious. Thanks for making them sweetie.
