Doesn't this dish look so yummy! Eddie made this for dinner for me! It was soooooo good!
He started by dicing up some lean chicken breast. Eddie made A LOT of pasta so he used about three chicken breasts.
Then he boiled some water...
and added the pasta....corkscrew in this case.
To make the pesto... he added some garlic...actually A LOT of garlic.
some basil...
and lots of pine nuts.
He added some olive oil to this...although you are supposed to stream the olive oil in as the Cuisinart is mincing....but he's making me dinner....so I'm not going to say anything!
Mince it all up by using the pulse function.
until it's nice and creamy!
Then add the parmesan cheese and mix (this can also be done in a bowl)
until it looks like this. Now I know what you are thinking... it looks kinda thick. But it's supposed to be thick in this case because we are adding chicken broth and cream in a later step.
By now the pasta is done, so drain in a colander and let sit in the sink.
Then heat a medium saucepan over medium heat and add some olive oil
Add some garlic and the diced chicken.
Heat until cooked through, stirring occasionally.
Then he surprised me and added some green beans (I don't recommend this step...sorry baby! I love you!)
Add about a cup of chicken broth...
Add some sun-dried tomatoes....these are really good in this dish!
Add some cream...
Then add the pesto.
Mix it all together...
Then add it to the pasta and mix. YUMMY!
