The Pumpkin Series- Breakfast… For Dinner!

Everyone in the blogging community has a nickname for their significant other. I do not even know what half of them mean! The Pioneer Woman calls her husband “Marlboro Man” and Micha calls her husband “D” and so I’ve been thinking I need a nickname for my husband as well! However, I am not good with nicknames. I am just not creative that way. My husband and I have never really had nicknames for each other. He calls me “sweetie” and I call him “baby.” Boring I know! So I have been thinking hard for awhile for what to nickname my husband and I’ve finally got it! Are you ready for this? I thought long and hard to come up with this and I really like it? Ready?!

TDH!

He is my TDH! Now you are probably wondering what in the heck does that mean?. Well, I’m not gonna tell you! But from now on when I refer to my TDH I am talking about my husband.

This was a special treat I made for my TDH the other night. He used to tell me how every once in awhile his mom would make pancakes for him and his sister with ice cream on top. Personally, I had never heard of this before, we never got breakfast for dinner, let alone breakfast with dessert on top! But I have been seeing so many posts about pumpkin pancakes and since I had some homemade pumpkin puree lying around I was dying to try out a pumpkin pancake recipe and I didn’t want to wait until breakfast!

I found this recipe from Kristin of Dinner with Kristin. The pancakes turned out really fluffy and yummy. The pumpkin taste was very mild and kind of got overpowered by the ice cream a bit. They are probably much better with just melted butter and lots of maple syrup!

The ingredients: 1 cup milk, 3/4 cup pumpkin puree, two eggs, 2 tablespoons butter, 3 tablespoons brown sugar, 1 1/4 cups flour…

1/4 teaspoon each of ginger, nutmeg, and cloves, 1/2 teaspoon cinnamon, 1 teaspoon baking soda.

mix

Mix all the dry ingredients together in one bowl, and mix the milk, pumpkin puree, eggs*, butter (melted), and brown sugar in another bowl. Then add the dry ingredients into the bowl with the wet ingredients and fold with a spatula until just incorporated. Make sure you don’t mix too much or you will have rubbery pancakes.

*apparently you are supposed to separate the eggs, mix the yolks in the liquid batter then mix the whites in at the end. I didn’t do this and my pancakes turned out fine.

baking

Once the batter is ready, preheat a skillet (I used my iron skillet) and add some butter. I made big pancakes so I added a heaping soup ladle full of batter onto the preheated skillet and cooked about 5 minutes on each side. You know when the pancake is ready to be flipped when bubbles start to form on the surface like the above bottom left picture. Once cooked fully through, remove to a plate and top with hot butter and maple syrup, ice cream, or your favorite topping!

D actually stands for Dylan. It's not a very creative nickname. He does have another nickname, but he doesn't like to share it around too much ;)
It's actually funny you just posted about nicknames, because I was starting to feel like all the initials I was using were getting confusing. I *just* switched over to using real names - though I'll probably often refer to Dylan as D, since that is a nickname of his in the real world too...

TDH huh sweetie...you are going to have to tell me what that means someday...I'm struggling to figure it out at the moment. Thanks for the suprise breakfast for dinner! The pancakes were great! Love you.
